Mediterranean Lentil Bean Salad
Need a quick dish that will rock your world but not your diet!!
It only takes 10 minutes to prep and 20 minutes to cook! Can’t get any better than that 🙂
Ingredients
First steps are super easy. All you have to do is combine the lentils in a saucepan along with carrots, onion, garlic, bay leaf, and thyme. Make sure to add enough water to cover by 1 inch. Then just bring to boil, reduce heat and simmer uncovered for 15 to 20 minutes or until lentils are tender but definitely not squishy.
Then go ahead and drain the lentils and veggies and don’t forget to remove bay leaf. Add olive oil, lemon juice, celery, parsley, salt and pepper.
Last step is my favorite: Toss those tasty delights to mix and serve at room temperature.
