Quick lunch for a plant based diet! It’s tasty, fulfilling and won’t wreck your clean eating!

Ingredients (2 servings)

  • 1 cup of garbanzo beans (or one can rinsed and drained)garbanzo beans
  • 1 tsp of Flax Seed
  • 1/2 cup Cherry Tomatoes
  • pinch of Basil
  • pinch of Garlic (to taste)
  • 1 tsp Cilantro

IN a medium sized sauce pan, turned on medium heat, toss garbanzo beans* and heat for 5 minutes. Chop your tomatoes and cut your cilantro. Then add your fun ingredients: flax seed, cherry tomatoes, cilantro and spices. Let simmer and cook for another 5-10 minutes stirring often.

Place in a bowl and enjoy!

 

*If you are cooking the beans yourself make them the night before. Cover beans with water and discard any beans that float. Rinse beans well and place in a large pot. Cover by 2 to 3 inches with cold water and add bay leaves and salt, if you like. Place over high heat and bring to a boil; lower heat and simmer, covered, until softened, about 1 1/2 hours. You can use any extra for other meals
