Easy Zucchini Cashew Soup with Avocado and Tomatoes
You guys know me by now and the easier and healthier the meal the happier I am!! I discovered this new recipe by accident warming up my zucchini cashew soup and chopping some fresh snacks for my girls. Before we knew it, we had a new soup that we all really loved! I hope you enjoy!

- 2 zucchini’s, cut into chunks and steamed
- 1/2 cup raw cashews
- 3 cups water divided
- Himalayan salt or Bragg Liquid Aminos (to taste)
- 2 chopped garlic cloves
- 1/2 medium avocado
- 1/2 fresh garden tomato
Instructions
- Soak cashews in ½ cup of water; set aside and let soak for 1 hour. Reserve the soaking water. In a rush? Toss those cashews into a pot and set on a medium boil.
- When those cashews are done start the zucchini. Cut the zucchini into medium sized chunks and boil in the remaining 1 cup of water; only for a few minutes. Drain the boiling water and place the zucchini into a blender.
- Combine cashews with their water, zucchini, salt OR aminos, and herbs in a blender and mix until smooth. If you want add water as needed for desired consistency. Then pour the mix into saucepan and reheat slowly. The crazy part is this soup is delicious cold or hot.
- While reheating the mixture chop your avocado and tomato into small chunks and add individually to taste!
