Our dinner guests were on their way, we were hustling and needed something quick, yummy and easy to prep for our guests. The simpler the recipe the better right! Our biggest challenge was we hadn’t gone grocery shopping so our options for tasty and simple were limited!
This is what I was able to put together
- 2 large organic chicken breasts (fresh or defrosted)
- handful of fresh unsalted almonds
- 1/2 cup maseca corn masa(gluten free)
- 1 tbsp shredded parmesean/ or just plan parmesean cheese
- 1 tsp (ish) garlic powder
- pinch of sea salt
- 1 tsp coconut oil
Heat large pan with coconut oil on low-medium. While pan warms put dry ingredients in mortar and pistol. Grind almonds, masa,salt, parmesean and garlic together. Pour mix onto a large plate. Then slice your chicken into 2 inch strips and roll the chicken pieces in the mixture. As your roll the chicken add the finished pieces to the pan and allow to cook. Once all pieces are on the pan, lightly brown each side then cover for 5-10 minutes to make sure chicken is cooked through.
That’s it! Seriously it’s that simple. If you want you can chop some fresh chives and sprinkle on the finished product and serve with a side of steamed green beans or brussel sprouts! So yummy!
