Shrimp Spaghetti Squash Soup

In the winter months it is nice to have an easy go to dish that everybody loves! My husband and my two daughters (4yrs and 2 yrs) love this soup!

It’s easy and it’s healthy conscious!

Ingredients: 1 Large spaghetti squash, 1 jar of organic low sodium spaghetti sauce, 1 lb of  large frozen shrimp(tail off), 1 large zucchini, chives, 1 small jar of green olives, 2 garlic cloves, goat cheese, pinch rosemary and pinch of salt.

To prepare:

  1. Cut Spaghetti squash in half (long ways). Scoop out the seeds, place both halves in large pot of boiling water. (boil for 10-15 minutes)
  2. Put spaghetti sauce in a sauce pan, turn on low
  3. chop chives (need 1/3 cup) and place in sauce
  4. chop zucchini into small cubes and place in sauce
  5. chop garlic in small pieces and place in sauce
  6. Chop olives in half and place in sauce
  7. Pour frozen shrimp into sauce and stir
  8. Drain water from spaghetti squash and then take a large spoon and scrape squash strands out.
  9. Place squash back into the large pot, add the salt, rosemary, sauce and shrimp. Mix ingredients and let simmer for 5 minutes

Serve with sprinkles of goat cheese (add to your own liking)

*You can use cottage cheese in place of goat cheese for the kiddos
